INGREDIENTS

  • 1 pound of goat or beef, cubed
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons cooking oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Water
  • Chopped fresh cilantro or parsley for garnish

1. Heat the cooking oil in a large pot over medium heat. Add the chopped onions and sauté until they become translucent.
2. Add the minced garlic and sauté for another minute until fragrant.
3. Stir in the cubed meat and cook until it's browned on all sides.
4. Add the diced tomatoes, ground coriander, ground cumin, paprika, salt, and pepper. Stir to combine the spices and cook for a few minutes until the tomatoes soften.
4. Add enough water to cover the meat and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 to 1.5 hours or until the meat is tender and the flavors have melded together.
5. Taste and adjust the seasoning if necessary.
7. Serve the South Sudanese Shaiyah hot, garnished with chopped fresh cilantro or parsley.

This hearty stew is often enjoyed with rice, bread,"kisra." or of course the finest Asida prepared from Aniwe maize flour. You can also customize it by adding your favorite vegetables like carrots, potatoes, or bell peppers.
