  • 1 lb (450g) ground beef or lamb (you can use a combination of both)
  • 1 small onion, finely grated
  • 2 cloves of garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • Salt and pepper to taste
  • 1-2 tablespoons breadcrumbs (optional, for binding)
  • Skewers (if making kebabs)

1. In a large bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, chopped mint (if using), cumin, coriander, paprika, salt, and pepper. Mix the ingredients together thoroughly.
2. If the mixture seems too wet, you can add breadcrumbs to help bind it. Start with 1-2 tablespoons of breadcrumbs, mix, and add more if needed. This will depend on the moisture content of your meat and other ingredients.
3. Shape the mixture into small patties or mold it onto skewers to make kebabs.
4. If you're using skewers, make sure to press the meat mixture firmly onto them.
5. Grill or bake the kofta:If grilling, preheat your grill to medium-high heat. Grill the kofta for about 4-5 minutes per side or until they are cooked to your desired level of doneness.If baking, preheat your oven to 375°F (190°C). Place the kofta on a baking sheet and bake for 15-20 minutes or until they are fully cooked.
6. Set that aside and focus on the tomato sauce.

8. Introduce 4 diced tomatoes into the pot. Continue to stir and periodically add small amounts of water to prevent any burning. As the mixture simmers, use the edge of a wooden spoon or your cooking utensil to gently mash the onions and tomatoes.
9. Incorporate 1 tablespoon of tomato paste and 1/2 cup of tomato sauce into the mixture; this will serve to thicken the sauce.
10. Next, add 1 tablespoon of garlic paste and blend in the rest of your spice mix.
11. Slice one green pepper and incorporate it into the stew mixture.
12. Introduce the fried/grilled meatballs into the stew, cover, and allow them to cook for 15 minutes.
13. Turn off the heat, and for a final touch, sprinkle freshly chopped parsley to enhance the visual appeal. Then, serve.

Kofta can be served with asida prepared from Aniwe flour pita bread, rice, or a salad, and it's a delicious and flavorful dish that's enjoyed in various forms. Adjust the seasoning to your taste, and you can even customize it with your favorite herbs and spices.
